Blueberry Smoothie Recipe

I’m often asked for the recipes of the amazing food we serve at the retreats, and I love sharing them, so today..

I’m letting you in on the secrets of my absolute favourite smoothie recipe!

It’s never too late in the summer for this frozen treat, and it’ll give you that summer feeling whatever the weather.

The beauty of this recipe is that you don’t need fresh fruit on hand. I like to keep a stash of frozen fruit in my freezer ready for that smoothie craving!

A good blender with ice crushing is necessary.

Ingredients (per serving):

  • 150g frozen banana (1-1.5 bananas)

  • 150g frozen blueberries (1 cup)

  • 1/4 small ripe avocado

  • 1 teaspoon peanut butter

  • 1/2 scoop unflavoured vegan protein powder (completely optional)

  • 1 handful spinach leaves (~10g)

  • 50ml almond milk

Replacements: if you don’t have almond milk, any milk or even water will do.

Toppings:

  • mixed seeds (I like pumpkin & hemp)

  • dried and fresh fruit (anything seasonal, I especially like pear & raspberry)

  • toasted, unsweetened coconut flakes

  • nuts for extra crunch

  • the best homemade granola (stay tuned for the recipe I use for this soon!)


How to Make It

 1. Add ingredients to a high-speed blender in this order: spinach → peanut butter → protein powder → avocado → banana → blueberries → almond milk.

 2. Blend from low to high until smooth, stirring if needed.

 3. Adjust the liquid for thickness: less for a scoopable bowl, more for a smoother texture.

 4. Pour into a bowl, add toppings, and enjoy immediately.

This smoothie is perfect for breakfast, to take on the go, to have post workout, or simply to have as a healthy but oh so tasty dessert.
